A beautiful well rounded coffee from the region of Popayan. With tasting notes of caramels, pineapple & chocolate. A perfect pairing with milk beverages or simply delicious as a spro.

Altitude: 1500-2000masl

Variety: Castillo / Catura

Process: Washed



Traceability


Sourced through the Popayan Reserve Program. This program consists of 67 carefully selected farms employing 400 members of the community during harvest. This program helps and encourages growers to improve quality and their operations. By ensuring a premium price is paid to the grower, we are helping improve sustainability and improving the quality of coffee grown on these farms. All while making sure the growers are receiving a fair price for their efforts.



Roast style - Medium Roast


Our most popular style for this coffee, I like to call this the all rounder. So tasty with milk, yet still super smashable black.

I like this coffee anywhere from 10 days post roast.


The All Rounder šŸ«šŸŒ°šŸ„šŸ®šŸ’ƒ


Ratio 1:2.15

Recipe 20g/43g/29sec

Pre-infusion: If you have got it and want to use it, add 4-6 seconds to the recipe for pre infusion (play with this as every machines style of pre-infusion is different)

Notes: Full bodied, brown sugar, nuts, milk chocolate & mild tropical acidity.


Modern & Funky āœŒļøšŸšŸ˜Ž


Ratio: 1:2.75

Recipe: 20g/55g/30sec

Pre-infusion: nah

Notes: Pineapple juice all up in here, still plenty of sweetness. Light to medium silky mouth feelz.


Intensity šŸ–¤ā˜•šŸŒššŸŒ‘


Ratio: 1:1.9

Recipe: 20g/38/32

Pre-infusion: If you can 10-15 seconds with flow control. Or 4 seconds on more tradition styles.

Notes: heavy body, syrupy, deep caramels, bittersweet chocolate.
